Ingredient :
125 gm butter (RT- room temperature)
125 gm castor sugar
2 eggs
125 gm self raising flour
1 tbsp baking powder *saya skip baking sebab dalam self raising flour dah ada*
2 tbpn coffee dissolve in 100 ml water
100 gm walnut *saya gunakan walnut, pecan dan almond*
Method :
1- Preheat oven 350 F/ 170-180 C
2- Beat butter and sugar until fluffy and light. nd then beat in eggs, flour and baking powder.
3- Beat in 1 tbsp of the coffee mixture and then add up to another tbsp little by little until the mixture drops easily off the spoon. Keep the rest of the coffee mixture for the icing.
4- Stir in walnut. *saya chopped nut tu dulu baru kacau*
5- Bake about 40 minute or until skewer comes out cleanly. Let it cool
Icing :
1 stick of butter
200-300 gm icing sugar * saya letak sikit je, sebab saya tak suka manis*
Beat butter until fluffy and beat with icing sugar with the rest of coffee mixture. Syop when you have a colour and deep flavor you like. Ice the top of the cake.
Saya tak suka kopi. Saya dari kecil memang tak minum kopi. Pernah la minum waktu duk USM untuk hilangkan rasa ngantuk, sekali saya tak boleh tidur, mabuk, naik loya, perut memulas. Langsung muntah disebabkan minum secawan kopi. Adeh... memang tak boleh. Sebab tu saya tak pernah stay up sewaktu belajar dulu. Paling lewat tidur jam 1230, itupun sebab kelas silat habis. Kalau tak, memang selewat pukul 11 la saya tidur. Orang baru nak stadi saya dah tutup lampu bilik.
Kek ni rasanya sedap, rasa kacang. Saya suka ^^.. Topping tu saya letak shave chocolate dan chopped almond je.
